The week before I left the States, I made the most AMAZING, umami-rific Vietnamese-inspired fried chicken. They were marinated overnight in fish sauce (very yummy, not as gross as it sounds) with shallots, garlic, and all kinds of other Asian sauce-y goodness. Then deep-fried and coated in the marinade. I have never tasted anything so utterly delicious.
Will have to blog the recipe for posterity.
